Brut Des Flandres is produced using a double fermentation method and long maturation. Beer yeast is used in the primary fermentation, and sparkling wine yeast is added in the secondary fermentation, which creates a play of small popping bubbles, which give the beer its exceptional freshness. The beer is matured at a low temperature for at least a month until it is naturally clarified. It has a mildly sweet aroma with tones of flowers, citrus, and ripe fruit.
